Our Origins

Spanish conquest

Before the Spanish conquest, we found the Mixteca and Zapoteca cultures at the south of Mexico, now Oaxaca State. As these people were strong warriors none of them was conquered by the Aztecs. Their most known cities are Monte Alban and Mitla. It has been said that the mezcal was born at the same time than the modern Mexico, when the Spanish distilled the pulque (pre-Hispanic elixir – fermented sap – given by Mayahuel, the agave goodnes) using an Alambique (Arabic invention). However, in Monte Alban there have been found ovens and clay pots supposed to be used for distilling the pulque.

The "Kuachi" name

Kuachi means struggle in Mixteco. For us Kuachi is a tribute to the Mexican people who day by day fight and struggle for a better living and future no matter the circumstances.

Idea

Kuachi was born to offer the world the Mayahuel elixir. Our Mezcal is made following the traditional and ancient method used by the “maestros mezcaleros” at the Oaxaca mountains that crafts water, earth, wind, and fire with the agave. As the circumstances are nor the same, each one of our distillations has a different taste.

Serpent

Thinking the distillation process as a serpent, we can divide it in three parts (head, heart,and tail). At the beginning of the process – the head - you will obtain methanol, then you will get the mezcal – heart - and at the end you will have less alcohol and more water – tail.

Philosophy

KuachiPleople S.P.R. de R.L., is a rural society that crafts mezcal at San Agustín Amatengo,at the Oaxaca’s Mountain range (16°31′0″ N, 96°47′0″ W; 1,362 mamsl). We blend the Mexican past with the future. As a cooperative we pay the just salary to our workers, produce the mezcal on the base of sustainability so we do not over exploit the land, nor the forest, neither the agave; and we do business on ethics basis.

Carino Baltazar Ramírez

Maestro Carino Baltazar is a Chemical and Industrial Engineer that learned the craftsmanship from his grandfather Mr. Sotero Ramírez, in fact he is the third generation of maestros mezcaleros from San Agustín Amatengo. Maestro Carino has crafted famous worldwide mezcales and by his long experience he is recognized as one of the best maestros mezcaleros in the world by “Mexico Desconocido” magazine.
