Our Handcrafted Process

The elaboration is carried out through 5 steps: Cut or "Jimado", oven cooking, grinding, fermentation and distillation.

Cuishe or Karwinsky Agave

The cuishe (karwinsky) is a micro-endemic wild agave, since its distribution began it has been reduced to 132 square km around the world. It is born in limestone soils with little rainfall and reaches maturity at 12 years. This ensemble preserves the aromas of huisaches, pines and oaks that abound in the area, as well as a light mineral perfume with floral notes provided by the cuishe ensemble. Its robust and grassy character is appreciated in its flavor. In our design, we have reflected the combination of the leaves of these two agaves: the uniformity of the leaves of the cultivated espadin agave but also the robust touch and strength of the wild cuishe.
